Cajun Jambalaya (pressure cooker)

1 lb. chicken breast

1 lb. ground turkey or ground turkey sausage browned (set drippings aside)

1 zucchini diced in 1/2 cubes

1 diced tomato

1 crushed tomato

6 mushrooms sliced

1 carrot shredded very fine

1 cup thin sliced okra

1 stalk of celery diced very fine

1 clove of garlic minced

2 sweet bell peppers diced small

1 green pepper diced small

1 lb. shrimp pealed and deveined raw (will cook in hot mixture without heat)

Cajun spices to taste ( I used about 1/4 cup)

pour the drippings from the turkey in a frying pan on med/high heat caramelize 1 cup of diced onions                                                                                                                                                     In a separate bowl combine 1/2 cup of almond flour  and 1 cup of whole milk  and mix until there are no lumps. add contents slowly into frying pan of drippings mixing continually for about 10 minutes. mix in to the pressure cooker mixture.                                                      Cook in pressure cooker for 35 min.

When the timer goes off open pressure cooker and add 1 lb. of raw shrimp and Cajun spices mix well and retighten lid and let sit for 15 minutes.

serve over rice, spaghetti squash or pasta of your choice.

I personally eat it by it’s self or over spaghetti squash.

Frozen grapes

I never thought about this until my friend Jennifer Fansler offered me this as a snack. I love them.

I rinsed the grapes and the plastic container that they came in, I blotted them dry and put them right back in the same container and put them in the freezer over night. They end up a bit slush like inside the grape skin. Easy , taste great and very low cal.

Paleo Breaded Baked Chicken

Chicken

almond flour

egg

sea salt

ground pepper

minced garlic

Optional -your favorite spice

 

rinse chicken then set aside

beat egg

dredge chicken through egg then roll in almond flour

place on a baking sheet ( I line my baking sheets with foil to make it easier to clean up)

add garlic, salt pepper and spices to the top of the chicken

bake at 350 degrees for 30 minutes.

Moist inside crispy out side.

I haven’t tried it yet but I wonder how it would work to fry it in coconut oil in a frying pan. I would guess that it would be a great fried chicken??? Let me know if you try it.

How I started

I am brand new to eating healthy. My friend Shawn Jackson kept talking about The Whole30. I do not enjoy cooking and I thought that it would be beyond my abilities. Much to my surprise I not only am enjoying it but I have found it quite easy. I find it necessary to put my own twist on every recipe that I have…even my own creations. The bottom line I have found that there is a way to make most recipes healthier and still delicious.

This is what I learned from my first 30 days.
Make a bunch at a time and put them in personal portion container. If you get hungry you have a quick healthy option.

Start with a larger bowl or pan then you think that you will need so that make for easier clean up.

Substitute: Dates, bananas and apples are a great substitute for sweeteners

Substitute: Replace nut flours for flour in any recipe. I make my own because it is so easy and much cheaper. Put raw nuts in a food processor and grind until it is a flour consistency. I think that this is called meal but it works that same a flour.

Substitute: I make my own nut butters: roast nut in frying pan on med/high stir to prevent burning. Put roasted nuts in food processor until flour like consistency then add a drizzle of olive oil. Add less then you think because the nuts do create their own oil. You can also do this with raw nuts both are great.

Substitute: Dates make for a great bonding agent and adds sweetness when making protein bars

Tami’s Paleo Banana Bread

2 cups of almond flour

1 cup dates

3 over ripe bananas

3 eggs

1 teaspoon of baking soda

1 cup apple pealed and cored

2 cups walnuts

 

 

You can buy almond flour but I made my own because it was cheaper. Just put raw almonds in food processor until it is flour like consistency

 

add the dates to the food processor until they turn into a sticky ball

add almond flour, eggs, bananas, baking soda

mix until it is well blended

add pealed cored apple and blend a bit more. ( I left it a bit chunky for texture)

add diced walnuts and blend a bit more

 

grease 2 loaf pans with olive oil

pour in mixture

bake at 350 for 30 minutes

 

I have also made it with mixed nuts and it is very good this way also

Roasted Broccoli

broccoli
Sea Salt
minced garlic
spices of your choice

preheat oven to 425
cover baking sheet with tin foil
Spread broccoli tops on a baking sheet
drizzle or spritz olive oil on to broccoli
grind seal salt the top
then sprinkle on garlic
bake at 425 for 25 minutes
I have done the same process with baby carrots,sliced carrots, & cauliflower I love them all but the broccoli is still the front runner.

Tami’s Paleo Coconut Macaroons

Tami’s Paleo Macaroons

1 can coconut milk
1 cup unsweetened dates
12oz unsweetened shredded
2 eggs
2 teaspoons vanilla
2 teaspoons coconut oil

First create sweetened milk by:
 1-16 oz can of unsweetened coconut milk
1 cup dates
 
all ingredients in food processor- chop until dates are well chopped
pour into a large sauce pan
bring to a low boil turn heat to medium stir often for 15 minutes
turn heat off
add coconut oil (don’t stir)
let cool
add coconut & vanilla mix all
beat eggs extremely well and add to mixture
form balls by hand or with a small scoop
place on a large cookie sheet
bake in a preheated at 350 degrees for 15 minutes or until tops are golden

Options: I have also made them with fine chopped almonds mixed into the batter before baking. (These did not taste as sweet?)
Options: Drizzle dark chocolate on them also.
